When it comes to winemaking, there's nothing as important as the grapes. The grapes are the foundation of what the wine is. They provide nearly all the flavor, and the identity. There is one other thing that is necessary for the grapes to go from being simple, sweet juice and transcend into a luscious wine. It's overlooked by most people, and it's all around us. I'm talking about yeast, of course. Can I have a figurative show of hands as to how many people know exactly what yeast is?
Chef Tim Costner on how rice found a home in the Po Valley and why risotto's creaminess comes from technique, not cream.
Risotto is one of those dishes that feels as though it must have existed forever: rice, broth, butter, cheese, and a wooden spoon. But its story is really the story of rice finding an unlikely home in northern Italy. Rice originated in Asia and reached Europe through centuries of trade and migration. It was known around the Mediterranean during the Middle Ages, but Italy's relationship with rice changed dramatically in the 1400s and 1500s.

The ever-popular wine release weekends are back with a bang. Each month we introduce a new wine and pair it with one of Chef Tim's delicacies. This is your chance to taste the wine before anyone else and take it home for a steal.

The 2023 Grapefather is on special again for the birthday. This blend of Petite Sirah, Malbec, Negroamaro and Sagrantino is sure to win you over: easy drinking, with notes of deep cherry, berry and oregano. It pairs well with bolognese, grilled red meats, and fatty pasta dishes such as fettuccine alfredo or lasagna.

Want to learn to cook like a professional four-star chef? Now is your opportunity. Chef Tim hosts monthly culinary demonstrations in the library room at Camino, twelve people or fewer, so you get one on one time with him. Learn to make the dishes you only dream of ordering at a fine dining restaurant: risotto on October 16, then jambalaya, gnocchi and more. $85, or $75 for members, with a wine tasting, house-made appetizers, the demonstration, and a meal kit with a bottle of wine to take home and reproduce the experience wherever you are.*

Placerville
The cellar goes by reservation.
Starting after the birthday party, the Placerville cellar opens by reservation. The 1853 cellar of the Sequoia Mansion becomes a booked experience: an hour with six of our best wines, cheese and charcuterie, and wine talk with Nello or one of the team.
Fall special: $30 a seat, regularly $60, and free for Wine Mob members and up to four guests.* Book a seat on Eventbrite, or text Debi with your name and number of seats at 530-207-0396. A date runs when six seats are booked.
Every Friday night this fall, any bottle is 25% off, to enjoy with dinner or on the patio while the band plays. Bands play Fridays at 5, Saturdays at 4 and Sundays at 2, outside while the weather holds and inside when it cools.
